OPEN THE APP. This is done in the same way every other app is opened - tapping it.

CLICK THE \'+\' ICON IN THE TOP RIGHT OF THE SCREEN. It's just below the battery meter.
In iOS 7, click "New" instead.

YOU ARE NOW FREE TO WRITE YOUR NOTE. When you're finished, click 'done' (top right), or use the home button/lock button to exit the app.

FROM THE MAIN PAGE OF THE NOTES APP, YOU CAN SEE ALL YOUR NOTES.
TIPS
By scrolling down up a little at the main notes list, you can find a search bar, which is usually hidden. Use this to quickly find notes.
